If you can get the factory wiring diagrams for the same year harness you will be set. That is the best way to go. If not, maybe a Chiltons or such at the local library will help.

As you strip down the harness you may/will find wires that are not part of the EFI. GM always seems to tuck a few in there for the alternator or a temperature sender or some such thing. So don't be surprised to find 'extras'.

It can be helpful to put masking tape flags on connectors and label them as you figure out what each is for.

Also, what "stand alone" do you want to make?

For SD setups, you can salvage many harnesses out of other models and make it work with minor modifications. The easiest "fix" is to make the harness from a 90-92 V6 F-body work on a 90-92 V8 F-body with only minor changes.

But get those diagrams like RBob said, and then you can see what you need and what modifications you'll need to make it work.
