Need Advice
I have a '72Z that will be undergoing a transformation this winter. I plan to put in a late model LT-1 383, keeping my muncie 4spd. Want to use the FI, but have no emissions and other crap to have to deal with. What are my options in terms of engine management? Factory computer-will LT-1 edit (and GM ECM) allow me to eliminate some functionality and do tuning? Would DFI be a better choice or does that still require the GM ECM. I'd consider something like speedpro, but don't have $2K just for this.

The factory computer will allow you to remove these functions with the proper software. I do not use LT-1 edit or Tunercat so I can not tell you what they will allow. I would ask each of them directly about their software.
Would DFI be a better choice or does that still require the GM ECM?
DFI does not require the GM ECM. They send you one. My personal opinion is that the factory computer is the most powerful and least troublesome. You also have the added bonus of being able to drive to any shop and have them diagnose it as if it were a 19XX LT-1. All of the specialty computers are going to leave the average mechanic in wherever your car broke down baffled as to what maybe wrong. This will lead to a higher repair bill or the possibility of being stranded if you break down. Try getting a new computer for your DFI in Small Town USA on a Sunday.
I would not worry too much about the management side of things other than to educate yourself about the options. Believe it or not your largest headache will probably revolve around the fuel system. You should probably spend a little time thinking about how you plan to do the fuel lines and fuel pump.
