New to Engine Management

So I'm new to the whole engine management thing but I'm wanting to kind of get my toes wet. I've read all of the sticky threads about DIY PROMs and read a couple books and feel confident enough to get started tuning my 89 GTA but I still have a couple of questions regarding engine management systems. One of them regards what to start out with. Is it okay to start out with the stock management system or is there a aftermarket kit that anyone recommends? Also, what are some things to avoid when getting into engine management?
