Biggest engine that is like your current V6 is the 3.4 liter. It isn't a direct bolt-in, but can be done.
Biggest engine that will fit in your car is the biggest big-block you can find. 600+ cubic inches are becoming common.
Somewhere in-between is the land of the practical, which means the standard small-block Chevy in its various displacements - 305 & 350 are the standards, 400's are out there, 434's can be built.
How much will it cost? Two. No, make that "too", as in "too much". It isn't cost-effective to do it even if you do all the work yourself, so having some shop do it is not at all economical, and could bring up questions of your mental stability. Unless this car has some sort of sentimental value, your best bet is to sell it and use the proceeds to buy a factory V8 car. Do with that what you want as far as engine size. If the car does have some sentimental value, keep the V6 in it and buy a V8 car for the V8 factor.
I didn't know all this before I started mine. I did all the work myself except front end alignment.
