I used that intake manifold gasket. It's expensive, and I can't get it anymore from my local shop.

That is what summit carries. Does it matter? The one I originally used was like 35$ when I got it from pep boys. Will the one summit has be just as good?

The felpro 1255 will be fine. It's nice and thick.
If you want to be able to reuse it a few times, coat it with white grease during installation.
Will require a retorque after a few heat, cold cycles.

I ended up driving to a bigger pep boys and got the more expensive gasket (the first link). Does that need to be retorqued as well?

i use the stock vortec gaskets.. they work just fine, the ports are teh right shape, the right size, the holes for the bolts are in the right spots. they have the right thickness so the intake doesnt' "fall in"
you just have to torque them properly.. only about 11-14lbs.. that's IT. no retorqueing required.
