Chevy 480 Street Stroker: Opinions?

I'm guessing this is not right for my car:

Oh sure... I know the suspension has to be beefed. And there is the that 700r4 I should nuke. Oh... the brakes would need to match performance of new engine and tranny... but I digress.

Would this engine fit my third gen?

it will bolt onto the motor mounts no prob. but you will need to get a fuel regulator or sump your tank so the mechanical one will work

And on that subject, I should be able to get one of these instead and with no problem:

That has Vortec heads. Usually also a no-no for inspection. They have external egr, which in itself isn't bad. But, if they check for all FACTORY equipment and they see external EGR setup, which never cam from the factory on a third gen.....
