can't tell how much oil I have!
I had me mechanic install hooker headers 2055s and after that the dip stick shows it being bone dry, and I can't rely on my oil pressure gauge bc it doesn't read correctly. ...any suggestions? And when should I add more oil I have about 180 miles since it left the shop

I would try to determine why the dipstick no longer registers and fix the problem. It would be a pain in the **** to have to drain and measure the volume of oil anytime you wanted to check the oil level.
Did the dipstick tube have to be removed from the block in order to install the headers? Perhaps it wasn't seated all the way back into the block after the header install was complete.

It's practically impossible to estimate when to add oil without a dipstick. Way too many variables to consider.
I would try to determine why the dipstick no longer registers and fix the problem. It would be a pain in the **** to have to drain and measure the volume of oil anytime you wanted to check the oil level.

And the main concern is that I live 65miles away from the shop bc I don't want to go to a local mechanic who will charge, is it safe to drive?
And is it bad to overfill oil

Sounds like he took it out or it may have broke.
Get a flashlight & look in the hole. Look at the tube -- is it bent out of shape where it should go into the block? Is it rough on the end that goes in the block or is it smooth?
Or are you talking the dipstick will not fit due to header flange interference?

Not sure if he had to remove It from the block, but he told me he had to "tap it back in" but it won't stay.

Most engines (Chevy V8's included) will run just fine with the crankcase a quart low.
Since you drove it 180 miles already without knowing what the oil level is, you're probably fine if you want to drive it back to that shop 65 miles away..
Ignorance is bliss.

If it was me, I would just start from scratch and do an oil and filter change. This way you know there's 5 quarts of oil in there. This will at least buy you time to figure out the dipstick thing.
