If you are willing to run a hydraulic TOB, the OBX 1 3/4" stainless should be fine.

Any "built" car should have an SFI flywheel, SFI clutch, and SFI explosion proof bell housing. You could run a 168 tooth flywheel with 11" clutch, and a hydraulic throw out bearing.
I only had to see a clutch come through the floor, remove the accelerator pedal, go through the dash, and break the windshield once to never use a stock bell housing and clutch again on a built car.
