is there any way to tell what number my car was out of the 38,000 or so produced that year?

If you're referring to 1987 Camaros, there were a total of 137,760 units built. Both plants, Van Nuys and Norwood, started their sequencing with 100,001. Based on the last six digits of your VIN, you'll be able to tell what "number" your car is for the specific plantsite in which it was built.
