If they're factory, then they're leather. If you want to get real specific, then the backs, headrest area, and lower sides of the cushion are probably vinyl, and the seating surfaces are "leather" (using quotes since people like to question the quality of GM's leather).
100% vinyl factory seats were not available after 1987, and were usually only found on no-option V6/Iron Duke cars.

I have two 87 IROCS. Both with factory gray "leather" seats. Classic Industries has "exact fit replacement" upholstery kits for the seats. But they call the material vinyl. When I called them to ask if that was the same as what the factory called leather, guess what..... yup, really, they did not know the answer. Surprising huh? Anybody here know if the 87 was real "leather" or was it this deluxe vinyl that Classic has for sale.
I really don't want to pay a trim shop many thousands of dollars to replicate this pattern and material for two cars.
I don't know what was available stock for your year but it's easy to tell leather from vinyl. Leather doesn't stretch and vinyl does. If you take your hands about 2" apart and push the material together and twist it, leather will kind of crack and crease while vinyl will not. Vinyl also feels more sticky. Find a car you know is factory leather and compare the seating surfaces to the sides. Unless it's an old Mercedes or high end luxury you will see what I am describing. I understand the new synthetic leathers are a lot better but I haven't seen one that feel the same as leather. I'm in the process of deciding on synthetic vs leather vs cloth on my interior so I know your dilemma. Go to lethalinteriors.com if you can wait a month or two and she will get you a decent price.
Oh by the way, I had a tech at classic Ind take a photo of the cloth kit for my car. Supposed to be OEM but it was terrible. Wrong color, pattern and the materials just looked bad. An "expert" I had review the pictures said it was poor craftsmanship too. FWIW.
