Timing for a Carb'ed and (slightly) Modified LT1 ?

Firstly thanks for all the info on here. It's helped a lot over the last few years without me needing to ask a question !
Secondly. Sorry. I'm sure this has been asked a million times but I have looked and can't find it . . .
I'm at the final stages of putting a '93 LT1 into my '83 Z28.
The car was already hacked about before I got her so I've been part customising and part restoring as I've gone along . .
I've switched to a 600CFM Edelbrock Carb and the GM intake.
I've got HEI Dizzy, CC503 camshaft, 1.7 Rockers (+beehive springs).
Heads are stock ones but have been mildly ported.
Doug's LT headers into a (currently) completely unbaffled, dual exhaust.
Crank, rods and pistons are stock.
I'm running 3.73 gears, T56 trans, ally flywheel.
Electric water pump, manual steering (lowered alternator with short belt).
A/C removed (it rarely gets that hot in the U.K)
I've machined a keyway in the crank hub, added timing tape to the crank pulley, made-up a timing pointer and set TDC using a DTI.
My question is . . with this set up, what should I be setting my timing at ?
I've gone through the internet and came up with various answers but I'm not happy.
For now I've got her idling fairly happy @ 700RPM and throttle response is good but I want to be sure.
I'd say I'm 85% there at the moment. The carb isn't what I plan to run long-term but my experience with Edelbrocks has been good so It seems like a sensible place to start.
Economy has gone out of the window. I'm going for performance and she'll be running on the highest octane fuel I can find.
Comments and suggestions welcomed and appreciated.

36deg full mech all in by 2500 rpm, max around 52 w/ vac. adv. for cruise. See where it comes out @ idle if too high either get a crank retard or mod the curve.
