Which n2o kit are you using and why? How much hp added? What did you have to do to the engine to make it handle the power boost?

I have an old NOS cheater plate kit. I have it set at about 75HP. I picked up 8mph in the quarter. I didn't do anything to my motor to prepare it for Nitrous.

Is that all the stock motor can handle? What do you need to do to the engine to make it handle 150hp shot or (I know, too extreme) 200hp shot?

There are varied opinions on this. A stock 305 should should handle 125HP well enough. Some people have run 150HP but I will let them tell you if it safe. If you want to run more than that you will at least need forged pistons (maybe rods as well), some sort of timing retard controller and all the safety devices you can think of.
