Is this as simple as rejetting and buying a carb plate? I bought a universal wet EFI kit from Nitrous Express, I am converting my car to carb and a dual plane this winter.

Is there any reason I can't run a different brand Nitrous plate like a NOS? Seems like I could pick one up on ebay for $40-$75 used all day long.

Yep, appropriate jets for carb pressure, you may need a few fittings also for your fuel supply depending on how your previous setup was, may also need a wot switch bracket, maybe a switch also.

You can run whatever brand stuff you want, just keep in mind you'll need the jets to match the plate, or at least a good idea of whats what, as different manufacturer stuff varys.
