Tall is always better. A tall tire has a bigger footprint from front to rear. A single point of the tire will stay on the ground longer. That will give better traction than a short wide tire.
It's always better to stuff the tallest tire possible under the fenders then adjust the gearing to suit the tall tires. If you're fixed on the gearing then all you can do is choose a tire tall enough to suit the gearing.

Thanks for the input I think I might go with the M/T # 3756R it's 27x10.50 on the stock wheel . It's a little taller but not bad and see how they do I have the 16" irocs on the car now 26X11.50 et streets but want to go to a 15" wheel more side wall . The 15" stockers will do untill I can get my draglites or telstars another thing to think about ,also whould 8" or 10" wide wheel be better . Mine is an 87 also no where near your league just a 383 super ram with n20 . Thanks again

Rim width can be an inch either way of the tread width. All DOT tires are measured across the sidewall, not the tread.
A 26x11.50 MT ET Street has 9.8" of tread and should be on a 10" wide rim.
The 3756R has 9" of tread but is designed to fit on a factory style 7.5" rim. I think that's just because it's a radial tire.
My car was last driven on the street as a street car 10 years ago. It's been a race car ever since then.
