can i get rid of those round rubber mounts?
The ones under the transmission mount,
Do you have to have them or can you just bolt that plate to the crossmember?

There's no reason to do that, as far as I can see. It would gain you little if anything. If yours is broken, or if it really bothers you somehow, you can get another one off of a later model car that doesn't have the "intermediate" bushings.

They sell a polyurethane replacement for less than $20.They're listed as Secondary Transmission Mounts.Energy Suspension Part# 3-1109G.Summit and Jeg's carry them.
