Why not just change the steering wheel to a non-air bag wheel?
Changing the column isn't hard at all though, 7 bolts, 5 plugs, and one wire going to the gear selector if its automatic, not counting removing that under dash panel which has another couple bolts. Not sure if all the plugs will match up though if you use an older non airbag column, maybe someone else would know that.

just remember to remove the battery positive cable for atleast 10 min before removing any wires for the air bags
