I know coil over will save weight.... I'm all for that. But which handles the the best? that's what I really care about.

Less unsprung weight will help handling to a degree, but the best benefit for your car will likely beng able to fit the biggest tire possible under the car. A coil-over setup will limit your tire size significantly.

Coil over is one of the worst mods for handling you could do to these cars.

And fitting bigger and wider tires doesn't always = better handling. It all depends on alignment and other things. Wider and bigger might add unsprung rotational weight which is bad for handling and reduces acceleration, ofcourse this depends on the threshold between the added traction benefit vs the added unsprung weight.
