intake choices
What intake choices do i have with 87 up heads, under a stock hood with a edelbrock carb,
And do i need egr or not, I live in TN and dont have any emissions checks.

Go to www.holley.com and check out the Action Plus and the Stealth. I have the Action Plus and like it, and Mark Shields has the Stealth. You might send him a message and ask him how he likes it.
In reality, you can use almost any SBC intake if you simply elongate the center bolt holes and use tapered structural washers (the square ones) to distribute the bolt head pressure evenly. There aren't many aftermarket intakes that don't have the room and material necessary to do this. If you're really ****, you can mill the intake bolt surfaces with a .625" or larger end mill at an 18° angle so you don't have to use the washers.
EDIT: - You can even get them in aluminum to match the intake material and look "pretty" if you want:

P.s. Deepstage, I am using a weiand Team-g #7525 and a holley 750 vs. I am not sure if they make this inake anymore, but it is on holleys web site.

Last time I checked, intake bolts on SBC engines were 3/8-16, so I'd guess you'd want the 3/8" washers. They can be found in lots of places, but the ones I found at McMaster were 1¼" square. You may need to trim/grind these down a bit, so the aluminum makes that a little easier.
