What does the IAT sensor do?

What does the IAT sensor do?
How can relocating the IAT sensor to a cooler area give you more Power?? I really don't understand what it does and how it works. I just got a 14x4 open K&N and will be installing it this weekend.

Mods:Hooker Aerochamber 3" exhaust, gutted kitty,
March 2 piece underdrive pullies, smog pump gone,;these two made a very noticable difference.
14x4 K&N open air element filter
Eibach springs with KYB's are already installed up front. Gonna work on the rear soon.
Appearance: Harwood cowl hood, Z-28 wing, painted black-original color was light blue)
Stock Options:117,000 miles on motor, 5spd, TBI, 305, T-tops
Going to the track this summer, but i'm pretty sure i'm still in the 16's on the 1/4 mile (or maybe not any more)

Axle/Gears: 3.27 9-bolt
The IAT tells the computer what the temperature of the incoming air intake charge is. In the stock location it picks up residual heat from the engine. By moving it to the beginning of the intake tract it will read a little lower which causes the computer to richen the fuel mixture a little bit.
