assuming you have an auto trans, you just apply the brakes and give it gas at the same time. Only use enough brake to keep the car from moving while the wheel(s) spin. DO NOT take the drums off!! This will cause you to have no brakes at all because the shoes will have nothing to push against, even your front brakes won't work! That sounds like a good plot for Jackass

By "brake stand", do you mean "burn out"? As in, keep the car from moving while you let the smoke out of the rear tires?
It is possible to balance how hard you press the brake pedal and accelerator, and do that. It's easiest if the rear tires are wet, though. It is also a little hard on the rear brakes, because the brake shoes are in contact during this exercise.
The best way to do this is with a line lock, a solenoid-activated valve that closes the pressure off to the front wheels (after you press on the brake pedal), which keeps the front wheels locked when you let go of the brake pedal - releasing the rear brakes. The solenoid is operated via a switch in the driver's compartment.
The worst place to do this is in public, on a public road, in a parking lot, or any place other than a drag strip where this activity is performed safely and legally (and with a purpose).
