RPM drop - Kills car?

When ever I let off the gas suddenly, or brake fast, the car's RPMs drop sharply to 500 or below, usualy killing the motor (and leaving me dead in the water). What is causing this?

Any ideas? Seems weird that this happens right after my cottman horror story...

I've had that happen due to a vacuum leak, a bad MAF and sometimes timing that's a mile off (hence no vacuum)
