Noisy valve or ignition . . .
Engine is a 350 with 327 heads valve where
adjusted properly and engine run just fine.
When on the road and accelerating between
1500 to 3500 rpm there this noise that is like valve knocks that disappear when not
accelerating or over 3500 rpm. Could it be
the ignition?

That would be classic "pinging" or "spark knock".
Either back the timing off a little bit; or put an adjustable vacuum advance and curve kit in the distributor; or use higher octane gas; or get the engine's coolant temp down a little.
