A thermostat, no matter what the temperature, does not throw a code. Run without one, it won't throw a code. What it does do, is help alter the amount of fuel the injectors dump in - courtesy of the coolant temperature sensor. Based on a preset temperature list, the ECM alters how much fuel to put in. Run colder that what the ecm is "used to," so to speak, and the ECM will dump more fuel than what is really required.

A 180° thermostat should be fine. If it were my engine, I would reprom for a 160°. But that's if it were my engine.

Tiny improvement in performance.

There is a down side tho.

Since your oil and everything else does not get up to full temp, many of the compounds that would be burned off or evaporate are left behind. It won't happen overnight but over the span of 50K it will wear out quicker and sludge up.

I wouldn't go down all the way to 160, 180 is my limit and that is no panacea either but a comprimise.
