what is the passenger side sensor in the side of the head?
do i scrape paint off exhaust ports on heads from the rebuild?

Passenger side is the fan switch, if you have a mechanical fan, then a pipe plug.
You don't have to, I've seen plenty of motors get exhaust bolted up with painted over ports (where the gasket surface is). Obviously you can if you want to ensure a proper seal.
