Never done this before - Installing Vortec Heads

Hey all -

I'd like to get your input on installing my new GMPP Vortech Heads (linked) on my 383.
I have ARP head studs, the two brand-new cylinder heads, and I am hoping to get the head gasket tomorrow morning locally.

I have never installed cylinder heads before, but I've got (most) of the tools I think I need. The engine pic is here (linked), and I've attached a pic of the Vortec cylinder heads (this pic stolen from Summit).
  • Any tips/tricks on doing it right?
  • How should I clean the head surface first? Do I need any "goop"?
  • What gasket (Part #, if you know it) should I go with? I need to be able to pick it up locally here in Southern Oregon (we've got plenty of Shucks, NAPA, and a few regional parts warehouses, not to mention a Chevy dealership).

HELP!

I just got the gasket and everything looks good except something I just noticed:

There is a wedge shaped hole (presumably, for the water jacket) in the cylinder head, and I have a circle hole in the same spot on the engine block.

How is that supposed to work? I've attached pictures showing what I'm talking about...

sbc head/block holes have been those shapes for years. nothing to worry about.
