easy, not fun, but easy. I would highly suggest a haynes manual so you have a step by step procedure. There are other threads about this, use the search feature in the red tool bar above. I'm sure some people have done a step by step procedure.

Like 84redta said, it's not really hard, but it's not much fun either. I just finished changing mine. I put in a brand new tank ($175), pickup/sending-unit($125), filter and pump($92). I suggest you pick a pump for an LT1 instead of using the suggested replacement; the stock one works too hard. I opted for a Delphi EP381, but I had to modify it slightly to get it to fit. I spent a couple of days on it, but I could probably do it all again in a couple hours if I had to.
Don't cut your floorpan out. It seems like you have to disconnect allot of stuff at first, but it's really pretty simple and the majority of the fasteners you have to remove are holding the heat shields on. If your exhaust system is welded together, you'll have to cut it in a place or two. Mine was still factory, so I just unbolted it. I had to get a new v-clamp from NAPA, the original one broke at one of the hinges.
Start soaking all the nuts and bolts right now with PB Blaster. Do it daily til you work on it. While you are at it, start hitting all the bolts and nuts that you might ever think about removing. You will be glad you did.
