Rocker arm noise.

I got a mechanics stethoscope to adjust my rocker arms after doing my valve guide seals.

I got the engine put back together enough to run, and I stuck my probe on the valve cover on the passenger side, and it sounds great. No loud noises, nothing unusual. Does this mean it is adjusted properly (counted the number of turns on each bolt)? On my driver side valve cover I tried to spin them for resistance, then snug another 1/4 turn, and now there is a LOT of noise. Should I just do both valve covers with the oil blockers now, or should I just re-do my driver's side.

One more thing, is it okay to remove the factory oil deflectors from the factory valvetrain? Everyone says they are dead weight, so I removed them, and I just wanted to make sure nothing horrible was gonna happen.
