Power vs. Manual Steering
I'd search for some info but it's down at the moment. Does anybody run a manual steering box in their car? What's the difference between the two?

first offf ..... WHY ? next try and turn those big wheels up front with no power assist .... sure it is a more sporty feal but seriously I bet you would warp the steering wheel after a season LOL .............. mine kicked out for a few seconds once MAN that was hard to park !
if you take out power steering, you just need to add negative caster. it makes it alot easier to turn the wheel, but, the wheels will 'want' to turn all the time (think in terms of a a shopping cart, when you move backwards, the turning wheels spin with no effort on your part. This is the effect you'd be after)

I think you need an S-10 box and the main reason people do it is to lighten the front as much as possible for drag racing where usually you're going in a straight line.
Obviously the ratio is different so you can't compare the stearing effort of the manual to a power set up where the pump is not working or the belt broke etc and it's near impossible to turn the f'ker.
IMO you would not gain anything by converting a daily driver unless you like to crank the wheel 50 times to get the car parked.
For road racing I would prefere the quick ratio power stearing box over a manual set up.

We just bought a little 99 Accent. And it has no power steering. It's definately hard to get used to, and I would never get a sports car without power steering.
