Question about fuel pump relay

You can self energize it with a DMM(digital multi-meter) i'm pretty sure. But the easiest way to tell if it's bad is if your car has a long cranking time at start this is a good sign that the relay is bad. The car normally will start right up with only 1-2 cranks but if the fuel pump relay is bad the relay circuit will be bypassed and it will start off the oil pressure switch and it takes time for the motor to build up oil pressure when cranking which will cause a long cranking time. I haven't pulled the code yet but here's my situation... When I turn my ignition On, I hear the clicking that I think is the relay energizing (priming?) the the fuel pump. It lasts a seemingly long time, probably 5-10 seconds. Usually, my car will start up pretty well, but I've noticed that often when I have trouble starting, my gas is lower than normal. (I never go below like 1/4 tank, but the problem seems to be getting worse). Unfortunately, if I cant get the car to start the first two or three times, I think the carb ends up getting flooded and then the car is stuck there for several hours. The fuel pump relay is the only "clicking" that I'll hear when I turn the ignition right? That's not the starter or anything?
The other night I was sitting uphill (front end higher) at a stop light and the car died... Because of the gas level (that may be a fluke) but also because of this uphill thing, I'm thinking I might need to replace the fuel pump itself. I went out and bought a Multimeter today... was wondering if anyone out there could provide instructions on how to test the relay.
I also plan to replace the fuel filter at the carb tomorrow, but I really don't think that's the problem. ohhh yeah, my choke light came on when I was uphill and it comes on around corners too.
Mmmmm, more I think about it, the more worried I am that it's the fuel pump. The ole' oil pressure relay doesn't usually help the situation- even if I'm reading good PSI the car isn't easier to start (I dont think)
I really need help testing this relay!
