How do you know what stall you have?

Engine: 357 vortec finished. need tuning
Transmission: Still works
Axle/Gears: need 3.73
How do you know what stall you have?
Just received my 2800 stall converter form EBay. My question is how would you know it is a 2800 stall?

Engine: pump gas 427sbc Dart Lil M 13.5:1
Transmission: Oldani TH400 w/ BTE 9" convertor
Axle/Gears: 31 spline Moser/full spool/4.11Rich
Install a transbrake and pull the pill on the 2 step and you'll know for certain.
A half azzed -and I mean that- way to tell, get into high gear going about 5-10mph then floor it, the stall should flash and hold until vehicle speed matches stall speed then the tach will start to rise. Kinda hard if your kick down is hooked up though.
