I have 2.73s and 2800rpm stall
I'm currently using a 2800RPM stall Vigilante in my set-up which still has the standars 2.73s in there. The car feels pretty sluggish until you really start to squeeze the gas or all out floor it. I'm guessing this is because of the 2.73 keeping the RPM down so low?

Orrr it could be your 2800 stall :P
Not particularly desireable for street duty, you should have to give it more gas to get it going
but of course better gears would help because it would just require less power to get it moving

with such a high stall teamed with those sorry 2.73 gears, im surprised you even get it to move from a stop lol!. A lower stall would help a bit with those gears but since you already have the converter installed, do the sensible thing and get some 3.42 gears(your stock tpi will not like anything steeper). If you want the maximum gain you can spend a little more and get into heads/cam work and then you should see a noticeable gain.

I've already got heads/cam/intake/exhaust etc. Hence the 2800 stall. The only thing I have yet to touch is the stock 2.73s. I was thinking of 3.23s as it still keeps some top speed potential.

i'd go with 3.42's at least, better acceleration and you're still not killing your top end...get the best of both worlds.
