Rear Diff
Own 1991 Camaro Z28 305 TPI w/5spd manual-G92.
Regular gasket or sealant?
What type gear oil and how many quarts?

Sealant is fine. Paper doesn't really add anything to the party.
75W-90 Mobil1, with 1 bottle of the GM additive or 2 bottles/tubes/whatever of aftermarket, if it has posi. (G80) Best to look at the carrier and see: if all you see is gears, it's not posi and you don't need the additive; but if you see some springs and plates, it is and it does. If you see 2 little weights on little tiny shafts with itty bitty springs around them, it's an Eaton Gov-Lock, and you need to start looking for a posi before it blows up, and it doesn't need additive. Put the additive in first, if required, and fill the rest of the way to the plug w gear lube. Should take 1½ - 2 quarts of gear lube.

I use a gasket most of the time. I've had some leaks when using sealant only. IF you have a standard differential then you do not need any additive. If you have a Auburn differential then you probably need 2 bottles of additive. Any 80W90 gear oil will work. 2 quarts is usually enough if you don't spill any.

My GMC truck would always spit the gasket out in the same place. I even replaced the cover with a brand new GM. Still did it.
Now I use a tuff-cork gasket (has metal sandwiched between the cork layers) and Permatex® Gear Oil RTV Gasket Maker. This is a must if using synthetic gear oil. https://www.permatex.com/products/ga...-gasket-maker/
OEM specified. Specially formulated to withstand the harsh gear oil environment found in differentials and transfer cases. Because gear oil has friction modifiers that break down normal RTV and cause leaking, this specialty silicone has been tested to OEM specifications to ensure complete sealing. As a gasket maker, it seeks and seals leak paths that cut gaskets cannot. It can also be used to seal cut gaskets.

I run Royal purple 75w-90 in my '87 iroc with the G92 9-bolt 3.45 ratio.
When I bought the car I noticed that the rear was leaking and by the time I got around to addressing the issue a lot of it had leaked on to my floor. The PO used sealant and I chose to go with a gasket instead. I ordered a couple off of summit and so far there has been no leakage.
