5W-30 or 5W-20? Car runs well, new oil and filter, just nitpicking now. Oil opinions?

OK i changed the oil. Glad i did! I went with Valvoline "NextGen Maxlife" 5W-30, in the green bottle (it has more Moly in it than normal oils, and its a part of the oil blend.) The Maxlife is suppose to be good for not making leaks like a lot of synthetic oils (i dont care WHAT the Oil forum says, many people report this with Full Syn oil, they seem to ignore the people that say that saying "That cant happen?") but i dont have Synthetic in there.. i have the 5W-30 grade with a new ST3980 *larger Oil Filter, and it runs grrrrreat (blew some carbon out of two cylinders, i think i got the cylinder that was causing it. Let out a half quart of Trans fluid, too. Smooth now, no more hesitating.) I also saved the old filters from past 3 OCs for if i get a hacksaw to cut them open, and see what i see.
You saw the Seafoam vid, i did that twice it really made the car come alive.. changed the oil and decarboned a cylinder or two at the front with a piston soak.. spark plugs were fine, no issue at all.. now its great and i have it "where i like it" also the oil is right halfway in the hash marks on Oil dipstick, not up to full on the hashmarks, but halfway. I could go nuts over that. First time im not.
Now, i topped off with 5W-20 for the 5th (not a whole 5th) quart. Runs very very well! I *almost* wonder if i can use that instead of the 5W-30, it has a flash point of 450 degrees that oil so im not all that worried about the FL heat, especially since the new Water Pump is cooling the engine very well
Wanted opinions.. its the carb'd 2.8, im OT using heavier oil anymore i had 10W-40 of normal "Maxlife" in there the first time or two i changed the oil, and the engine is really running well now. It is also not coming out as black as tar anymore.. this engine had a very unised history, now its running super. Really an improveent after the decarboning (took spark plug out let it sit for 15mins put back in) and letting out trans fluid, it was laboring it was too full; not anymore. Runs like a champ, im leaving it alone. Until next Oil Change in ~5000 miles, or 5000 miles.)
Which grade do you prefer for our V6 engines, i have the last of the "first generation" of the V6 before they redesigned and strengthened some things in 1985?

Your overthinking things WAAAY too much. Conventional oil is conventional oil (which is all you need, you don't need any fancy bottles its a total waste). Pick a brand and stick with it. Use the weight that GM engineers built the car to use. Which, in your case, I'm 99% sure is 5w30. If you ARE going to be **** about it, I'd keep your oil change interval at 3000 miles, not 5000.

Unless you are doing it to keep a worn engine going, or to break an enginie in, there is really no reason not to use the factory suggested weights, which I am also 99% sure is 5w-30, in fact I think all the 60/6s are.
