Coolant sensors

I recently had an engine built with Canfield heads. Recently when plugging everything back to the new motor, I noticed I had (2) extra plugs...

The Canfield heads did not come with the ports between the left two spark plugs (on each side) for the fan switch and the coolant sending unit for the instrument panel temp gauge.

Luckily enough, I have the TPIS intake manifold and it comes with an extra (3rd) port (looks to be the same size as the sensor...) on the front of the manifold to accommodate older TPI models, so with a little wire extension that should take care of (1) sensor.

I do not want to drill anything into my manifold or heads for the second sensor, so I was thinking of making something to have the sensor go in-line to one of the coolant hoses. Is there a particular hose that would work the best for this? I would think the hoses to and from the radiator are out of the question. I was thinking of one of the hoses from the throttle body.

Any other ideas would be helpful.
