Oil Pressure switch polarity

Hi. I was wondering if it matters which side of the oil pressure switch is grounded to the body?

Very much so.
Neither side is grounded.
Wiring goes from Battery (hot side of fuel pump relay) -> OPS -> Pump side of relay wiring.
It is only fail safe power to the fuel pump in the event the relay fails.

Oh oh. Mine has one terminal grounded to the firewall!!

I saw your other post about the fuel pump fuse blowing when you crank the car.
I would say that the oil pressure switch ground is your problem.
The switch is supplied with 12V from the fuel pump fuse and when the oil pressure builds up, it turns the fuel pump on. It's a back up system for the ECM controlled relay.

If the switched side of the oil pressure switch is grounded, it takes a crank or two to ground the hot wire and blow the fuse.
