You'll never know for sure just trying to time it yourself.
Just take it to a track.
I have to admit even g-tech times aren't all that accurate either.
I've seen a few friends try it out while doing 1/4 mile runs at a track and found the times to be off a few tenths and off a good amount of mph.
At the track I finish the 1/8 in 9 sec at around 71 mph, considering there's a gear shift in there to third to climb to 71 mph but not to 60 mph and the major lag for me in third gear due to the huge difference in ratio between 2nd and third, I'd gather my 0-60 time to be in the 6-7 range, high 6 low 7.
I finish the 1/4 mile at 91-92 mph usually with low 15's.
I've had a similar jump like you from 2.73 gears to 3.23 gears save for open differential and 10-bolt for me.
