Open Element = Lean/Choppy Acceleration

I finally switched my L03 over to an open element. It's 14'x3' w/ a K&N filter on it. Since I've done this it has run like a turd. It will run GREAT for 10 miles or so after the comp is reset, but then it gets really really choppy during light-med acceleration. Not stalling, but close to it sometimes, especially when creeping. At WOT it is ok but still some chop. When not in drive and revving the engine it seems fine. Runs great before the comp figures out whats going on. Ran fine before changing the element.

I plugged the vaccum line and mounted the IAT inside the cleaner. Have tried moving the IAT to different locations and it runs different in different spots, but still very choppy none the less. The funny thing is it actually seems worse in colder spots No spark problems, I don't think I have any vaccum leaks, and it definately seems like a computer aided problem of making it run lean. What else can I do to the IAT to get it reading for gas? Any kind of test I can do with a volt meter to see if its reading correct or if my IAT is screwed?

Have not adjusted the fuel pressure, but I'm going to try the mod later this week and see how it runs. Also double check vaccum lines etc..

Other mods - Heddman Headers, full dynomax mendrel bent free flowing exhaust (free flow muffler and cat), MSD blaster, 3.23's, Jet stage 2 chip.
I wouldn't think I'd be at the point where I would need to upgrade the fuel pump or custom burn a chip?

Any ideas/suggestions? The only thing I've read that makes sense besides fuel adjustments is putting a resistor in line with the IAT, but some dont reccomend? Should I keep driving it like this until my computer figures it out? I suppose my O2 could have grounded out and not getting any readings to adjust when the IAT gets hot? Kind of low on ideas, not much time to mess with it... HELP!
