Lower T-stat w/ mechanical fan
My 85 Z used to have a 160 thermostat, and I would notice that if I let it idle in hot weather, the thing would heat up to over 220 or so but then stay there. Someday I'll proably put it back in, but I need to know this first: Is there a way to make the fan come on at say, 170 to hold the temp there? Or does the fan always stay on? I know the guys with electric fans can use a different fan switch to make their fans come on at different temps, is there anything like that I could do?

A thermostatic clutch fan does that from the factory. And the coolant thermostat. You could switch to an electric fan, they're not that expensive.
...or you could get a thermostatic clutch fan hub from a truck. They tend to operate at lower temperatures and would pull more air belox 220°F. I had an '88 Astro van that would cycle the fan at about 150° air temperature (probably 170° coolant temperature). The hub is the same size, and the entire fan might even fit your shroud without changing the blades. I'm thinking twenty bucks at a bone yard would be a lot.
