Car slowly starts overheating

So today after about a week after my intake ordeal my car has been runnin better than ever and ive been enjoying my upgrades and can definately feel the difference until yesterday on my way home from work i scanned my gauges and took a double take at my temp gauge. Not good. 210 and slowly climbing. Until that nite my car had been running a consistant 165-175 at the farthest margin and now couldn't stay cool. Brand new thermostat, no hose leaks at all, filled coolant, and all temp sensors double checked for being hooked up and correctly. As long as ive owned the car its never overheated or needed the secondary fan to kick in till now. Im thinkin a sensor may be going bad or the water pump may be goin out. Theres the possibility of the thermostat but its brand new and i don't think it would go. Jus started troubleshooting so im going to go take a good look but was jus wonderin what everyone else thought or if they have had the same problem and had advice. As soon as i start it the temp needle just slowly climbs and doesn't stop. Somewhere in the coolant system the heat aint leavin. N e things appreciated. Much thanks

If the car isn't moving at least a steady 35-40 MPH, that's normal. The fan doesn't come on until something like 230 degrees F.

I realize the secondary fan is never running until then. I had it come on earlier today when it got near 240. i just meant ive never overheated the car before since ive owned it until yesterday and today. I pulled over because the temp to pop the hood when the needle was under 240 and both fans were running. if i keep goin the car keeps heating up. theres no stopping point for the temp it jus goes steadily straight up when u start it doesn't stop i don't know why at this point

I'd plump for the water pump.
can you see for flow anywhere on your motor...like maybe pop the top rad hose and check for flow.
I had that problem with my pump. Was turning fine but not pumping water...some check valve bad I believe. Anyways ...a new pump and I was back on track.
