Rear iron caliper issues, how to adjust?

Rear iron caliper issues, how to adjust?
Hey guys, I just finished swapping a disc brake (iron calipers) 9 bolt out of an 88 Formula into my 91 Trans Am. My car came factory with a drum 10 bolt rear. Now I'm having issues with the rear brakes. After bleeding them at least 3 times, it still feels as if the rears are doing hardly any work because the brake pedal goes down pretty far. Also, the engine easily overpowers the rear brakes if I left-foot brake on a standstill (tires easily just start spinning).
Now I heard that there is a method of adjusting the rear brakes with the ebrake. How do I go about this? I bought the proper disc brake parking brake cables and I'll finish connecting them this evening. Also, I believe my car has the self-adjusting ebrake because I don't see any way of adjusting it under the car where the ebrake cable branches off into two for each of the rear brakes; if that makes a difference.
Also I figured it would be worth pointing out that virtually everything in my brake system is new minus the master cylinder. I swapped in LS1 front brakes off of a 2000 Trans Am, new brake lines all around, I DID replace the spring in the prop valve for the disc rear brakes, and the rear calipers, pads, and rotors are brand spanking new.
