home depot will make the cuts, but they will probly want to charge you a certain amount for each cut. As for 3 subs, i have seen boxes in third gens, that have 3 12's, and others that have 3 10's

well, that would depend on speaker size, ported or sealed, and the factory recomended volume. i am pretty sure you can squeeze 2 cubic feet or so out of the trunk space, but you will have to be creative.

There are 6 or 7 screws under the dash pad in front (close to you). There are also 4 or 5 on the front window defrost vent.

Just make sure you use a magnetic socket or nut driver, or even put a magnet next to the screws by the defroster vent. Otherwise you WILL drop at least one screw in the vent. Lord knows we all have.

You better have some DAMNED good box plans if you think you're going to have Home Depot cut it all and it's going to all go together when you get it home. I've built dozens of these boxes, and there's still a pile of pieces that I need to re-measure on a per-box basis because all boxes come out just a little different.

When you make the box seal it well. Nothing worse than going thru the work and having it sound like crap because the box is not sealed properly.
A buddy of mine almost trashed his 12in Pioneer that is in my car now because of a bad box. I talked him into letting me take it and I built a new box to custom fit in the back. I sealed the seams of the box with caulk after I built it and put in some poly fill (afraid I might have not made the box quite large enough). It hits extremely well.
