Is it possible to be too much?
I was looking at the different caarbs out there and there are 600CFM and 750 CFM, I know what they all men but if you only needed 600CFM carb and you used a 750 would it be too much? In so much that you would actually lose power? Or would proper tuning just give you a wider birth of things you could do with it?

It's all relative to what you are putting under that carb. A wimpy 305 or a fire breathin' 350 or 383. The smaller carb will always have better throttle response, and the bigger one will usually make a little more peak horsepower. If I was going to go out and buy a carb for a motor I planned to build up as I could afford it. I would by the 750. If it has some kind of auto/secondary action it will not be too big 'cause it will size it self to the motor. Check out the Holley #3310 750 Vac sec, the edelbrock performer #1407 even a rebuilt Q-jet will work well. the early ones (pre '74 were 750 cfm. Later ones M4M type are 795 cfm. I think the Edelbrock performer is probibily the easiest to work on and most trouble free. They are a very smooth carb out of the box, and can be tweeked to a sharp tune with edelbrock parts.

Yep, a 750 cfm Holley would be a good choice. I've had it on my 305 back when it wasn't a 383 and it worked well with a little bit of tuning. Now if I had no plans for the 305 I would have gone with a smaller cfm carb.

It depends on the whole car. If you have high gears(2.73 or something), a stock 305, and a 750 holley squarebore--off the line acceleration will probably suffer compared to a 600 holley, without any upper rpm gain. With a spreadbore(like a q-jet) off the line acceration will be fine with a 750--smaller primaries.
