Thinking about Edelbrock for next project.
I'm going to build a pretty stout 383 street engine (450-500hp) and I'm thinking of using an Edelbrock 750 or EPS 800cfm for simplicity's sake. I am not Pro- Edel/Anti-Holley or anything. I have used both and just thought that the Edelbrocks behaved better on the street than the Holley's I've had. Any thoughts on running Edelbrocks on stout mouse motors for the street?

Why would you run an 800cfm carb on a n/a street motor? Ive got a holley 750 on my 389 stroker (480 est flywheel hp) and its more than enough. I could probably even drop to a 650-700 cfm carb with out any issues.
As for your question:
From everything Ive read on these boards, the Edelbrock will run better right out of the box, but wont give you the fine tuning the Holley will.

MY 383 bad*** is runnig a 600cfm edelbrock, I put it like this a smaller cfm carb makes more off the line bottom end torque where a bigger cfm gives you more high end power and rpms, Me I like the bottom end power so i chose the 600 for that reason, but dont be fooled this thing is a beast even in the higer rpms(way more than expected) so really its up to you whether you want some evil off the line put your head back in seat power or the higher end power. The smaller the cfm the more streetable it will be, but dont go below a 600cfm and please get the edel.

Well I guess it would help to know my definition of "street motor". I would call a street motor anything that is still able to run pump gas. My last build was a 385 that had a 830 double pumper sitting on top of it. It was just able to run premium pump gas and when it was on the strip it was shifted at almost 8000rpm. Because for the cubes and the rpm it needed that much cfm. Granted I probably won't built this next motor to spin that high, but I have always seen that usually a motor that would take...say a 600cfm holley would need a higher cfm edelbrock to run right. My first motor had a 600 holley on it that was stolen off the car from a friends shop (had to sit it outside with no hood and a tarp over it) andjust to get it back to my house we used one of his edelbrocks and the 600cfm edel was too small for it and the 750 was just right,
