Too much pressure?

This is about my 89 grand marquis. For some reason I have sheared 2 draincock valves in two pieces. Tonight on the way home I ran it out of coolant and it started knocking and it died. After letting it cool and filled it with water as fast as it drains I restarted the car and it didnt knock and seemed to run well. I have a 16 PSI cap on it. Any ideas on what my problem is?
