Coolant temp sensor and temp switch

ok, i just replaced my radiator and fan with a Be Cool aluminum radiator, and a Hayden dual electric fan setup. ive got it wired so that the fans come on with a toggle switch. it overheated worse than the stock setup. so i replaced the water pump with a heavy duty one, and put in a 160 thermostat. this is where the 2 sensors come in. i drove it last night, and the guage was fine just idling, then when i drove it the guage would work its way up rapidly and it got to about 240 then shot back down below 200. and so i drove it some more and let it climb up to 250, then i came home. i expected the coolant to be bubbling and pouring out just like it always did. but it wasnt. i felt the overflow tank, and it was cool. so i put my finger in the coolant and it really was cool. so im just like hmmm. went to autozone, and picked up a new coolant temp sensor and a temp switch. i was needing to know if anyone knows of what might be going on. im about to go replace those 2 sensors and hope it works, but any info would be greatly apreciated.
