cars running hot need help

I have a 1986 iroc z with single fan, car runs cool on highwayabout 180 then if i get stuck in stop and go traffic the stock gauge goes all the way up to about 240 a little below red. The car runs perfect and does not overheat or leak antifreeze. Pls tell me ways that I can get it to run about 180 all the time no matter what.

someone pls help me out

Is the single fan controlled by the ecm or a fan switch. If its a fan switch were is it located.
