i feel that anything over 210-220 is overheating. But as for the gauge in my car, the red starts as about 250

The factory fan switch TURNS THE FAN ON at about 235°. So as far as the factory is concerned, anything UP TO that, is totally normal, and the engine does not require cooling AT ALL until it reaches that temp.
So no, 240° is not "overheating".
Which is not to say that you might not want it to run cooler than that. Just keep the difference straight between "preference" and "defective".
The stock gauge is not accurate, as being any kind of reliable indicator. Any resemblance to actual engine temps that its reading might bear, is mostly accidental. About all it's good for showing "normal/abnormal", "warmed-up/not-warmed-up", stuff like that. Don't try too hard to put numbers on it. That's one reason there's no numbers at all on most of them.
