Theromstats don't cool, they allow the engine to heat up to operating temperature. A 180* will start to open at that temperature and be fully open around 185*-190*, allowing water to flow throught the radiator.

Ok gotcha cause my plugs are basiclly tellin me that there a lil hot not bad lookin but jus a lil hot so im gonna switch out thermos. yea good point bout the only stupid question is one not being asked

With a 160'F your car never warms up.
180'F thermos seem to be just right for most people, most of them start open up real good around 170'F. With lots of air flow over the radiator a 180'F will keep you between 170 to 180'F.
With a 180 or 160 in our cars a lot of times the coolant temp likes to go up and down. That makes it difficult to maintain cooling system pressure.
What ever you do make sure you have plenty of air flow over the radiator. Stabile coolant temp and steady coolant pressure under varrious conditions are more important than low operating temp.
I would stay at 210'F all day rather than bounce back and forth between 200'F and 170'F.
