strange overheating issues

strange overheating issues

The car: 91 camaro rs 3.1 liter engine

I know its normal for the cars to run slightly hotter since the air isn't flowing through the radiator and blah blah blah. tonight it was weird. drove it for 10 mins at neighborhood speed. everything was fine. took it on the road going who knows how fast (speedometer broken) but trying her for power. came to a stop light and noticed the heat had spike past 220. MUCH higher than my little 6 cylinder's comfort zone. flipped on the heat and it dropped to normal. (fan engaged) moving= good even though the temp is a little higher than usual most of the time. any stop and the temp runs wild. the fan will not come on no matter what the gauge says. the temp fluctuates a bit too much for me to feel comfortable.

the cars been shut down for a while due to fuel injectors giving out. i went all the way down below the intake manifold and replaced those gaskets. broke the rules and snipped the gasket s in a place that doesn't actually seal against anything ( behind the lifter rods). replaced the thermostat gasket and all that. a minor coolant leak but i had filled it before leaving the house.

I was worried that i broke a head gasket but theres no smoke, power is what it always has been. but i got freaked out about a somewhat cyclical overheating pattern and a little yellow gunk on the oil cap. also forgot to mention before that the oil had a slightly weird glaze to it but i was told before that the 3 bad injectors were leaking down into the cylinder and mixing in with the oil.

Any ideas?

no help thus far but just in case anyone else needs this info one day I'll keep the thread going. drove the car today. warmed it up in the driveway then took it about 25 mins down the freeway at 65 and no issues till i got downtown and at the first stoplight the temp shot up to 220. then as i hit more and more stoplights the temp kept climbing. the fan just doesn't seem to want to come on or my gauge is wrong... if anyone knows, is it the sensor in the middle or on the driver's cylinder head that controls the info on the gauge?
