My temp gauge is at 160, I put in a 180 thermostat thinking I had a 160 thermostat. Could an aftermarket chip be causing this or is it the inaccuracy of the gauge? Also, is the 195 degree the best one to have in for the winter?

The 195* thermo is the best one to have in year-round IMO, engines actually wear LESS at 195-200 than when there run colder. It will also help water/fuel contaminates boil out of your oil, therefore preventing sludge/corrosion in your crankcase.
As far as your temperature discrepancy, I'm reccomending you try another gauge of known good quality.

Yeah I was thinking the same thing. I believe the guy who had it before me put in a hypertech chip too, not sure if keeping that in would be the best idea.
EDIT: was driving home from work and got to thinking. Is it okay to throw in a 195* thermostat with an aftermarket chip which may be tuned for a 180*? I know the thermomaster chip by hypertech is tuned for that.
